I’m Henrik Lerche, owner and founder of Heal-thy, a plant-based restaurant in the heart of Torrevieja. My journey began in 2020 when I faced serious health challenges: symptoms of multiple sclerosis (MS), high blood pressure, type 2 diabetes, arthritis, chronic pain, asthma, and periodontitis. Weighing 105 kg, I knew I needed a change. On August 1st, 2020, I embraced a plant-based lifestyle, removing all animal products and processed foods step by step. The results were transformative. By 2021, I studied under Dr. Morse, a leading naturopath, and graduated in 2022 as a Detoxification Specialist and certified Iridologist. After thousands of hours studying nutrition, fasting, alternative therapies, and spirituality, I lost 40 kg in a year, eliminated all pain and illness, and gained newfound strength through changing into a plant based diet. Also doing periods of only juicing, prolonged water fasting and focusing on eating as much raw fruits as possible.
In 2022, my wife and I moved from Denmark to Costa Blanca, where we struggled to find good plant-based dining options. This inspired Heal-thy. My son, Otto, who worked at a Michelin-starred restaurant in Denmark, adopted a plant-based lifestyle and joined us in Spain in the beginning of 2025. We were also blessed that chef Oliver was onboard and left Bornholm, Denmark to start this venture with us. Though new to plant-based cooking, Otto and Oliver crafted vibrant, flavorful dishes that appeal to everyone—vegans and traditional eaters alike.
Heal-thy is a warm, inviting space where every dish is made with care, blending Danish minimalism with Japanese-inspired elegance. We value hard work and integrity, crafting each plate in our kitchen using techniques like dehydrating, fermenting, and reducing for bold flavors. With locally-sourced ingredients, also including herbs we pick ourselves, we create colourful starters, hearty mains, and decadent desserts. We also offer Limited Tasting Experience special events, a 12-course journey, an evening of culinary delight at a truly high level including special wine menu or non-alcholic drinks menu.
Our commitment and love to animals drives our plant-based menu, standing against the cruelty of the meat industry. Sustainability is another key—we aim for zero waste, using every part of the plant, from vegetable stock made from scraps to fermenting, dehydrating to producing our own kombucha. Our open kitchen and bar showcase our processes, making Heal-thy a living laboratory of flavour.
More than a restaurant, Heal-thy is about building a community around healthy, honest eating. Profit isn’t our goal; we’re here to offer a place where fresh, vibrant food nourishes body and soul. We invite our guests to join this community, supporting us to keep this vision alive. While adding meat could draw more guests, we stay true to our values, using my knowledge to foster connections through delicious food that’s kind to animals and good for you.
